Vegan Coffee Cake
If it was easy to resist, it would not be called coffee cake!
Perfect for coffee-lovers, this vegan coffee cake is packed with coffee in the form of both coffee granules and fresh espresso.
It’s moist, soft and strikes a perfect balance between sweet and bitter flavours.
What makes this cake utterly decadent is the lashings of coffee flavoured whipped cream between each layer!
Here’s how to make the best ever vegan coffee cake :
INGREDIENTS : –
- 3 cups all-purpose flour
- 1 1/2 cup coconut sugar
- 1 tbsp baking powder
- 1 tsp cinnamon
- 3 tbsp coffee powder
- 1 1/2 cup plant-based milk
- 2 tsp vanilla extract
- 3/4 cup vegan butter or coconut oil
(For the cream frosting)
- 1 1/4 cup coconut cream
- 1 1/4 cup icing sugar
- 1/2 tsp vanilla extract
- 2 tbsp instant coffee powder
(For the coffee syrup)
- 1 cup espresso
- 1 tbsp maple syrup
INSTRUCTIONS : –
- Preheat the oven to 170 degrees C.
- To a large mixing bowl, sift the flour, baking powder, coffee powder, coconut sugar and cinnamon.
- Pour in the milk, vanilla extract and melted butter. Stir until smooth and evenly combined.
- Split the mixture evenly between 2 greased baking pans.
- Bake for 30-35 minutes or until it passes the toothpick test.
- Allow the cakes to cool for a few minutes before removing them from the pans. Then, transfer to a cooling rack and allow the cakes to cool completely before frosting.
- For the cream frosting : In a large mixing bowl, combine the coconut cream, icing sugar, vanilla extract and coffee powder.
- Using a stand mixer or a hand mixer, beat the mixture until it turns soft and fluffy. Set aside.
- For the coffee syrup : In a small bowl, add the espresso and maple syrup, and stir until the syrup dissolves. Set aside.
- To assemble the coffee cake, drizzle 3-4 tablespoons of coffee syrup evenly on top of the cake (you can add more coffee syrup, depending on how moist you want your cake to be).
- Using an icing spatula, evenly spread the cream frosting and place the second layer of cake on top. Finish with another layer of frosting.
- Transfer the cake to the refrigerator and let it sit for at least 1-2 hours. Slice and serve.
